In this blog post, i have shared three version of making ammini kozhukattai.
This is my third recipe using the ammini kozhukattai, i have already shared sweet ammini kozhukattai and spicy ammini kozhukattai. This one is the traditional way of making that. Normally tempering with the spices and tossed in grated coconut, frankly speaking this one is my all time favourite.

Modak is a similar dish that is prepared in other parts of India. This is a popular dish for the Ganesh Chaturthi festival.

Ingredients
For Dough:
1cupRice Flour
½cupFresh Coconutgrated
½tspSalt
1¾cupWater
1tbspOil
For Tempering:
1tbspOil
1tspMustard Seeds
1tbspUrad dal
2Dry Red Chilli broken into small pieces
1sprigCurry leaves
½cupFresh Coconutgrated
Instructions
Bring water to a boil in a sauce pan. When it starts to boil, take it off the heat and add in salt and oil. Add in rice flour and mix well. It will get thick. Now cover it and let it cool down.
Once it is cooled, add in some grated coconut and make small balls out of it. Place the balls in a oiled steaming plate and place it in steam and steam cook for 7 to 8 mins. Remove it and allow it to cool down.
Heat oil in a kadai. Add in all tempering items except coconut,saute it for a min,
add in mustard, urad dal, dry red chillies and curry leaves

Version 2: Kara Ammini Kozhukattai Recipe
This version of mani kozhukattai is made with regular rice flour. You can use store bought rice flour. I used rice puttu flour. Spice powder is tossed in mini kozhukattai and is a spicy verison.

Ingredients for Kara Ammini Kozhukattai
For Spice Powder:
Oil - 1 tsp
Chana Dal / Kadalai Paruppu - 1 tblspn
Urad dal / Ulundu Paruppu - 1 tblspn
Dry Red Chilli - 3
Kashmiri Red Chilli - 2
Whole Pepper - ½ tsp
Cumin Seeds / Jeerakam - ½ tsp
Fresh Coconut - ½ cup grated
For Seasoning:
Oil - 1 tsp
Mustard Seeds / Kaduku - 1 tsp
Urad dal / Ulundu Paruppu - 1 tsp
Curry Leaves a sprig
How to Make Kara Ammini Kozhukattai Recipe
Prepare Ammini Kozhukattai as usual.
Make the spice powder. Take all the spice powder in a kadai along with oil. Roast till golden. Now add in coconut and toss well in the spices. Once it turn light golden. Take this in a blender and make it into a fine powder.
Heat oil in the kadai. Add in the tempering spices and saute it for a min.
Add in steamed kozhukattai and toss well.
Add in the spice powder and mix well.
Serve.

Version 3: Ammini Kozhukattai using Red Rice
This version of mani kozhukattai is made with red rice. You can use store bought red rice flour. I used red rice puttu flour. It is a healthy alternative to regular rice flour.
Roasted Red Rice Flour - 1 cup ( I used puttu flour)
Salt - 1 tsp
Water - 1.5 cup
Oil - 1 tblspn
Mustard Seeds / Kaduku - 1 tsp
Urad Dal / Ulundu Paruppu - 1 tsp
Dried Red Chillies - 2 cut into small pieces
Asafoetida / Hing / Kaya Podi a pinch
Curry leaves a sprig
Coriander Leaves a handful finely chopped
How to Make Red Rice Ammini Kozhukattai
Heat oil in a pan, add in all seasoning ingredients and let them sizzle. Add in coriander leaves and give a quick toss.
Now add in water and salt. Bring it to a boil.
Once it boils add in the rice flour and mix well. Cook till it comes together as a mass.
Cool it slightly, take small portion and roll it into smooth ball.
Arrange it in an oiled steamer plate and steam for 7 to 8 mins. Remove and serve.

Make sure you shape kozhukattai really tiny so it serves the purpose.
Kozhukattai can be steamed in bulk and used in making different version of mani kozhukattai.
The spice powder for kara ammini kozhukattai can be made in advance and stored in fridge.
Pepper powder can be added in this kozhukattai for a spicy note.
